If ever there were a dinner party crisis where we had to rush in with an appetizer, we might actually be able to pull something off in almost no time at all. This bruschetta is a family favorite, one we've been making variations of for years, so it's the perfect recipe to whip up in a pinch. We decided to share this special (and very simple!) recipe for some of the best dang bruschetta you will ever taste!
A few simple steps:Note: the ingredients in this recipe can easily be doubled, tripled, or whatever to best suit the size of your party! Sometimes though, all you want is a simple lunch for one or two people. This recipe is perfect for two friends sharing lunch!
Begin by pouring the olive oil into a medium-sized bowl. Wash and rinse your tomato, and use a large knife to slice off all four sides of the tomato, leaving the core out. Slice these sections lengthwise, then dice them again into smaller square chunks. Place the tomatoes into the bowl with the olive oil as you slice them, because the longer they sit in the olive oil while you are preparing the rest of the dish, the better!
Next, mince the garlic and add that into the bowl as well. We grabbed the basil leaves from our own plants--there was nothing better than stepping outside to grab a couple of leaves fresh off the plant and slicing them up right away to serve! Lastly, pour a generous amount of salt to season, and you're all set to serve your bruschetta! These appetizers are best served when the baguette is sliced to 1/2" in thickness and lightly toasted before topping with tomatoes--we promise you'll have an instant hit on your hands! Enjoy!
