Every once in a while, we find ourselves running around in a pinch, looking to include an appetizer in our dinner plan or bring something to contribute to a group meal. In many cases, we might just stick with something we know, something we've made before and know well. But if you're looking for something new, something surprise your family or guests with a deliciously simple new dish, you've found it. While these few ingredients might not be something you'd put together at first brush, they combine to make a perfectly airy appetizer that will be the perfect complement to any summer meal!
A few simple steps:
Start by separating the whites from the yolks, placing the whites in a bowl, and beating them with an electric mixer for at least five minutes until the whites stiffen. Next, mix in the parmesan cheese, cilantro, microgreens, and a dash of salt and pepper until all of the ingredients are evenly distributed. In the meantime, heat the grapeseed oil on medium heat in a large skillet, allowing 1-2 minutes for the oil to heat before proceeding to the next step.
Drop even spoonfuls of the mixture into the pan, allowing them to brown for about five minutes on each side. Be sure to watch the patties, not allowing them to crisp beyond a light brown (the time it takes for each side to brown can be more or less than five minutes depending on the heat of the stove. When the patties are adequately browned, remove them to a large plate lined with a paper towel to absorb any excess oil. Serve hot topped with microgreens and a light dusting of salt and pepper.
