This particular recipe was one of those that was borne out of necessity; necessity, that is, to use up some of those leftovers that were nearing the end of their period of appropriate consumption. A few different dinners that week had left us with some shredded chicken breast, some veggies, and a few other culinary odds and ends. This quick and easy lunch was a big hit with the people who enjoyed it, but it was even more so on our end. Preparing it was a breeze, and we got way more credit for throwing together some leftover ingredients than we would have expected! With some of our favorite spicy microgreens, we decided to create a little bit of a Mexican-BBQ fusion salad, which is a great for getting both your vegetables and protein in!
What you'll need:2 boneless, skinless chicken breasts
2 handfuls spicy microgreens
¼ cup shredded cheese (Cheddar and Monterey Jack work well!)
1-2 Roma tomatoes
1 head Romaine lettuce, washed and chopped
1/3 cup sweet corn kernals, drained and rinsed
1/3 cup black beans, drained and rinsed
Barbecue sauce and Ranch dressing, to drizzle on top
Salt & pepper to taste
A few simple steps: While our version of the recipe was tossed together using the blessing of leftovers, if you don't have all the ingredients already prepared it will take just a little extra prep work. For the chicken breasts, heat some olive oil in a skillet on medium heat and season the chicken breasts with salt and pepper; cook each breast 4-5 minutes on both sides until the meat is fully cooked through.
The salad is simple enough to assemble, as the ingredients will end up being gently tossed together anyway. Wash the Romaine and the tomatoes, and be sure to drain and rinse the beans and corn. Chop up the Romaine into bite-sized pieces, and dice the tomatoes. I also ended up adding in some red onion, which needs to be finely chopped as well. Combine the veggies and cheese into a large bowl and drizzle with BBQ sauce and Ranch dressing. I ended up using this really delicious Sriracha Ranch dressing, because I love having a little extra spice to go alongside the spicy microgreen mix!
