What you'll need:4 whitefish fillets (we chose tilapia!)
1 tsp. dried dill (about equivalent to 2 Tbsp. fresh, crushed dill)
1 Tbsp. fresh chopped parsley
4 cloves finely minced garlic
1 handful Asian microgreens
½ tsp. salt
¼ tsp. pepper
1 Tbsp. olive oil
1 thinly-sliced lemon (remove seeds)
A few simple steps!
Once the foil is cool enough to touch, use a spatula to remove the fillets one by one to a serving dish or to individual plates. Depending on how you like your fish prepared, you may prefer to add a little extra salt once the fillets come out of the oven.
Top with some fresh lemon and the other half of your microgreens, and you're all set to enjoy a delicious dish! The microgreens and seasonings really bring out the distinct flavors of the tilapia, and the fish is a great protein alternative to other meats, but is light enough to enjoy on a hot summer's day without feeling overstuffed.
