One of the best things about a good sauté is its simplicity; by cooking up some onions with a little olive oil and then mixing in your veggies or meat, you have the ability to turn a few ingredients and a few minutes of your day into a delicious dish that your guests will never know was a nearly effortless preparation! These summer vegetables are a common favorite and can be prepared in any number of ways—this particular recipe is easy to adapt in order to suit your own personal tastes! Here is our take on a delicious zucchini and squash sauté!
A few simple steps:Depending on your kitchen tools, there are a few ways you can prepare the vegetables. We used a spiralizer machine to achieve a cool twist on the zucchini and squash. For the carrots, which are a little more challenging to slice with the spiralizer, we used a simple peeler. There are couple different blades that can work for slicing. You can also get some cool cuts using a Mandoline slicer, or even a knife. It all comes down to how you want the finished product to look, so it's often fine to go dealer's choice on this one. Whatever device you end up choosing, completely slice the zucchini, squash, and carrots and set aside.
Heat a skillet on medium heat before adding your onions along with the olive oil. Allow them to cook for about 2 minutes (you'll know it's time to add the rest of your veggies when the aroma starts to hit you—it's that heavenly smell that appears whenever you sauté onions with oil or butter). Slowly add in the rest of the sliced vegetables and stir to incorporate the oil and onions. At this stage, you can also add in about 3/4 of the microgreen mix, allowing them to cook alongside the other vegetables. Leaving them out is fine as well, as keeping them for a topping can actually preserve some of the nutrients in the greens! Season with salt and pepper and allow the mixture to cook for 2-3 minutes; the vegetables should be firm but still cooked through. The thinner the slices, the less time is needed. Right before removing from the heat, add the Parmesan and give the mixture a quick stir to slightly melt the cheese. Serve immediately after topping with fresh microgreens and a little extra sprinkle of cheese!
